Long pepper
The black long pepper (Cabe Jawa), also known as poivre long, comes from a tropical climbing vine that grows in the countries of South East Asia. They are many pepper berries fused together that are picked unripe and dried in the sun. Like cubebe pepper, long pepper was already known in Europe before the black pepper. But due to more favorable prices, the first two have slowly been supplanted and somewhat forgotten. Long pepper is still often used in Indian and Asian cuisine and on the islands of the South Pacific. The taste of long pepper is warm but less spicy than black pepper and slightly sweet with a hint of cinnamon.
Cooking tip
The taste of the long pepper is sweet, tart, with cinnamon-like components. It is used in all meat dishes, in particular game, fish, stews, powerful cheeses and sweet dishes.
